Cooking around the world: Josephine’s pilau
At The Hague University of Applied Sciences, we like to look beyond borders. This starts very close to home. After all, our school is a melting pot of more than 140 different nationalities. We talk with each other, learn from each other, and eat with each other – all of which are good steps towards world citizenship.
‘Pilau is so good that when my family moved to Canada when I was twelve, my brothers and I would always ask my mom to make it. She didn’t want to make it all the time – officially it is a funeral dish – so I learned how to make it myself. It’s easy to find all the necessary spices here in The Hague in African grocery stores. Pilau can be made for a lot of people by upping the amount of rice cooked with the meat. People expect it at a funeral; if your family doesn’t serve it, mourners won’t talk about the life you led, they’ll talk about how pilau wasn’t served at your funeral!’
Ingredients for 4 servings:
– 1 onion
– ½ kilo chicken
– 2 tomatoes
– 2 cups rice
– 3 cubes beef bouillon
– ½ teaspoon ginger
– ½ teaspoon piri piri powder
– 1 tablespoon mixed African seasoning
– 1 tablespoon pilau masala
– 1 red union
– 1 tomato
– 1 lemon
How to prepare
Dice the tomatoes and onions, cut chicken into cubes. Cook onions in oil in flat-bottomed pan on high heat. Add 2 tablespoons of salt and the ginger. Stir, add piri piri, and fry until golden brown. Add the mixed seasoning and the pilau masala. After 2-3 minutes, add the tomatoes. Reduce heat. When thickened to a stew-like consistency, crush and add the bouillon cubes. Add chicken, cook for about 5 minutes until chicken is cooked. Add 2 cups of rice and four cups of water. While waiting for rice to cook, make kachumbari to serve with the pilau.
For kachumbari: slice the red onion and the tomato very thinly. Wash the onion in salt water, drain, and mix onion with tomato, half a teaspoon of salt, and the juice of one lemon. Serve pilau with kachumbari on top.
